Breads With and Without Eggs, and Additives to Lookout For

Calcium propionate is a preservative made from  calcium hydroxide and propionic acid. Calcium propionate helps preserve food by interfering with the ability of microorganisms, such as molds and bacteria, to reproduce. The Calcium hydroxide portion is made from eggshells  Look at the label on Bread.  If it is on the label avoid if you have an egg allergy.

.There are many breads that often contain eggs.  It is best always to check the label to make sure.

In a restaurant ask if the sandwich bread, toast, or table bread has eggs or mayonnaise

    Below is a list of breads that often contain eggs.

    • Brioche
    • Banana Bread
    • Challah
    • Cornbread
    • Easter egg bread
    • French bread
    • Gluten-free Bread – Arnold’s Keto Bread has calcium propionate is made from  calcium hydroxide and propionic acid. Calcium propionate helps preserve food by interfering with the ability of microorganisms, such as molds and bacteria, to reproduce. The Calcium hydroxide portion maybe made from eggshells.  When you go to Arnolds website they are really big on no preservatives and no hormones in there products.  I list this under this section because I have tried this and had some swelling of face and tongue but no breathing or throat closure.  I haven’t been able to speak to their company yet about it. So you need to be the best judge on this product. My son and his wife love it, but they have no allergies.
    • Naan Bread – Made from flour, plain yogurt, water, egg, vegetable oil and yeast.
    • Some Potato Breads
    • Martins Foods Savory Sweet Potato Bread has eggs
    • Bagels – While most do not contain eggs. The egg bagel does have egg 

    Breads that are typically egg-free. Even though they are on this list it is best to check the label

    • White
    • Whole Wheat
    • Italian  – D’ltaliano Italian Bread – my favorite bread I use this one for toast and for sandwiches – Contains – Wheat, Soy, and Sesame.  If you have a sesame or a wheat gluten allergy don’t eat this. It does have Calcium propionate which is made from the mineral slaked lime and is not the fruit.
    • 5 Grain Bread
    • French
    • Sourdough
    • Rye
    • Pumpernickel
    • Pita
    • Martin Potato Bread does not contain eggs
    • Nature’s Own Butter bread has milk, soy flour, wheat gluten, cultured wheat flour, malted barley flour.
    • Ciabatta
    •  Bagels

     Food Additives

    Lecithin is a food additive known for its emulsifying properties and is a good source of choline.  Choline can help to lower homocysteine levels which helps to prevent cardiovascular disease.  It is found in bread.  Check the label to be sure it is not egg lecithin

    Bad Calcium Additives – The question to ask is:  Is it derived from egg?

    • Egg Lecithin – often listed as Albumin, Lysosome. 
    • Note: Calcium Propionate can be made from calcined eggs which are dangerous for people with egg allergies or can be made from Slaked limestone which is a mineral that is good:  calcium hydroxide propionic acid  is a Calcium hydroxide derived from eggshells,  Often found in breads and baked items. It is important to find out from the manufacturer if they use the one from eggs or from the mineral lime.
    • Calcium phosphates – you must look these up as some are good and some are bad.  The good ones are made from Minerals.  The bad ones are from eggs

    Good Calcium Additives – and is not derived from egg

    • Soy lecithin – soybeans, edamame is soybeans these are good
    • Vegetable lecithin – sunflower seed oil, sunflower seeds –
    • Calcium hydroxide (traditionally called slaked lime) is an inorganic compound with the chemical formula Ca(OH)2. This is a white powder or colorless crystal that is produced when quicklime (calcium oxide) and water are mixed together.
    • Note:  Calcium limestone.  Manufacturing of calcium hydroxide primarily relies on ground calcium oxide (quicklime) from high-calcium limestone

    Clarification:  This stuff can frustrate you when trying to figure it out.  Limestone is a general name for various different rock formations.  Its primary source is calcium carbonate but not entirely.  The most common source of calcium carbonate is crushed limestone and oyster shells. It is fed in the feed to chickens or laying hens.  The laying hens eggshell is calcium carbonate.  That is why you must make sure the calcium in a product is not from eggs if you are allergic. For other people it is a wonderful source of calcium.
