Ingredient Breakdown of Mayonnaise

Does Mayonnaise have Eggs

Most store-bought jars of mayonnaise are made with eggs.   Unless you make it yourself from scratch eggless mayonnaise is hard to find in a store.  Supposing it’s a Vegan Restaurant, and they specifically tell you on the menu that it is eggless, if not then consider and assume the mayonnaise has eggs.

Choosing the right oil for Salads

There are several options for choosing the right oil. Among these and foremost are allergy considerations.  If you have someone with a wheat or nut allergy you may want to shy away from that as a choice for the oil in your dressing.  Please note that the FDA recently added sesame seeds to the allergy list.  Choosing an oil that is rich in monosaturated fat, phytochemicals, and alpha-linolenic acid is best for salad dressings.  For the best nutritional choices stay away from heated or chemically altered oils.  So, what is left?  Your choices are many.  To explore the “flavors of Oil for Dressing”, check out my article. What are Substitutes for Mayonnaise

  • Avocado spread for Sandwiches
  • Guacamole for Sandwiches and as a dip
  • Cashew Cream – cashews blended with water and salt have a creamy consistency like mayonnaise and are great on sandwiches. Cashews are also listed as an allergen.
  • Cream Cheese
  • Greek Yogurt
  • Hummus
  • Mustard
  • Sour Cream
  • Tahini Sauce has a nice nutty flavor and is used in hummus.  It is made from toasted ground hulled sesame.  Note: Sesame is also an allergen product.
  • Tzatziki made from Greek yogurt, olive oil, and lemon juice has a nice flavor for sandwiches and as a dip

Is the shelf life of store-bought mayonnaise the same as homemade

Homemade Mayonnaise only has a shelf life of about 2 weeks. It must be kept refrigerated.  It is worth it because there are no preservatives added. Most importantly, if you use an eggless recipe, there are no eggs to give you an allergic reaction.

Manufactured mayonnaise has preservatives to extend the shelf life.  For example, Blue Plate mayonnaise, Dukes’ Mayonnaise, Hellmann’s Real Mayonnaise, and Kraft Real Mayo are all made from real Egg Yolks and have Calcium Disodium EDTA. Manufacturers use it because the food additive prevents spoilage and preserves flavor and color.  (Calcium Disodium edetate is a medication used to treat lead poisoning.  It has been used since 1953) The FDA, a.k.a. Food Drug Association states that Calcium disodium EDTA is poorly absorbed by your digestive tract.  That the maximum allowable daily intake (ADI) is .9 mg per pound of body weight per day.  The EDTA is usually synthesized and made from ethylenediamine, formaldehyde, and sodium cyanide.

What are foods that contain calcium disodium EDTA

  • Salad Dressings, sauces, and spreads
  • Mayonnaise
  • Pickled vegetables
  • Canned beans and legumes
  • Canned carbonated sodas
  • Canned crab meat, clams, and shrimp
  • Distilled alcoholic beverages
  • Cosmetic products like lotions, soaps, and shampoos.  It is even used in contact lens solutions

Is Calcium Disodium Safe

Common side effects may include mild skin rash, sneezing, stuffy nose, watery eyes, nausea, vomiting, loss of appetite, thirst, muscle or joint pain, fever, chills, and tiredness.

If you are pregnant or breastfeeding and receiving calcium disodium as a medication may want to discuss it with your doctor.  People with urination issues where they have problems urinating or if they have active hepatitis or kidney disease or liver disease should not take edetate calcium disodium. They can experience pink or red urine, numbness or tingly feeling, and light-headed feelings.
