Yuca Patty’s
Boil time 30 minutes
Baked in oven 50 minutes
Total time 1 hr 20 minutes cook time
Ingredients
Yuca – I use Goya frozen
3 Tablespoons of Minced garlic
1 teaspoon Salt
½ teaspoon Pepper
1 med/large Onion chopped
1 tablespoon Italian Seasoning
½ teaspoon of Onion powder
2 sticks of butter
¼ cup of milk or half n half
Directions
- Boil the Yuca for 30 minutes, drain and set aside to cool
- Each piece of Yuca in the center will have a stem that you will remove and throw away
- Mash the Yuca
- Add Salt, Pepper and Italian Seasoning, Onion powder
- Add melted butter and the milk (if allergic to milk use Almond milk, or Coconut milk or Soy milk)
- Use a mixer to blend
- Stir in the onions
- Form into patties
To Bake preheat: Oven temperature to 375 degrees if you are baking, then use a large pan lined with parchment paper and brush olive oil under the parchment paper to hold it in place and brush the parchment paper on top and then drizzle a little more olive oil on the parchment paper. Then put your patties on the parchment. Bake approx. 25 minutes then flip them over and bake 25 minutes more. Or until they are golden brown.
If frying on the stove top: Add Olive oil to the pan and warm up to medium or medium high temperature before you place the patties in the oil. Fry to golden brown on both sides and drain on paper towels
