Creamy Spinach

Creamy Keto Spinach

Total Time 15 minutes

Quick and easy, made with cream cheese, spinach, onions, nutmeg, salt and pepper.  It will quickly become a favorite.

Ingredients

16 – 20 oz of fresh baby spinach

1/2 medium sweet onion, chopped fine

1 tablespoon garlic, minced

1/2 teaspoon nutmeg

4 ozs cream cheese

2 tablespoons butter

1/2 cup of half n half milk

1/2 cup milk

1/2 cup of finely grated Parmesan cheese

1/8 teaspoon black pepper

1/8 teaspoon salt

Directions

  • Use a large pot and fill 1/4 full of water. Bring to boil. Add the fresh spinach. Let blanch for 2-3 minutes.  Stiring until all leaves are wilted. Drain in a collander to get the excess water out.    You will cook the spinach more later.
  • Premeasure all the ingredents so you can add them into the skillet in a timely manner.
  • In a large skillet melt butter on medium heat.
  • Add the onion and saute for 3 minutes.
  • Add the garlic and cook 1 more minute.
  • Adds the nutmeg, salt and pepper, stir just enough to blend
  • Add the cream cheese, half and half and milk
  • Stir until all is melted
  • Add the parmesan cheese and stir until melted
  • Turn the heat down to medium low
  • Add the spinach and stir until all is combined this will be another 2 – 3 minutes
  • Turn off the stove

It is ready to serve!
