Easy Baked Chicken Cacciatore

Pre-heat oven 375 This recipe is for 4 people

Total Cook time 45 minutes

Ingredients

1 Boneless skinless Chicken Breast per guest

Or if you prefer 1 or 2 Boneless skinless Chicken Thighs per guest

Preparation of Tinfoil you will need 4 pieces

Prepare Tinfoil by rubbing ¼ teaspoon of Olive oil on each piece of tinfoil.

Lay one chicken breast on top of each piece of tinfoil

Optional ~ Lay 1 small Bay leaf on top of each piece of chicken breast

Preparation Mix together in large bowl

  • Add all spices, tomatoes, onions, and fresh basil
  • 1 teaspoon Olive oil for the tomato mixture
  • 20 Green Olives sliced
  • 1 Onion – medium chopped
  • 1 Tablespoon Italian Seasoning
  • 1/2 teaspoon Onion powder
  • 2 teaspoons minced Garlic
  • 8 Plum Tomatoes chopped
  • Stir and let sit in spices for 10 minutes so flavors will blend
  • Then spoon the tomato mixture equally over the 4 chicken breasts
  • Wrap to close each chicken breast with the mixture of tomato so it doesn’t leak.
  • Set each chicken portion on cookie sheet
  • Place in oven at 375 for 15 minutes then lower oven temperature to 350 and bake for 30 minutes.
  • Remove from oven and serve with a salad
