Brown Butter and Sage Sauce

Brown butter is sometimes referred to as hazelnut butter. It exudes a rich and sometimes nutty flavor. A good sage butter sauce is excellent with pasta, potatoes, pork, or sausage.

Equipment

  • Medium Sauce pan
  • Cutting board
  • Sharp knife
  • Long wooden spoon

Ingredients

  • 8 Tbsp unsalted butter aka 1 stick of butter
  • 1 clove garlic chopped and crushed or minced
  • 1/4 cup fresh sage leaves coarsely chopped
  • 1/8 tsp ground black pepper or white pepper
  • salt to taste

Instructions

  • Tip: It is important to know that brown butter can burn easily. You will need to stir constantly to avoid this. Once all ingredients are added and as soon as the butter smells nutty and looks caramelized remove it from the heat to a separate bowl.
  • Melt the butter over low medium heat in a medium saucepan.
    8 Tbsp unsalted butter aka 1 stick of butter
  • When the butter just starts to slightly bubble add the garlic.
    1 clove garlic
  • Sauté the butter and garlic for about 1 - 2 minutes
  • Add the fresh sage and the salt and pepper. At this point, you will not need to cook the sage long. usually about a minute. It will continue to release its flavor after you remove it from the heat and have it in the bowl as it cools down.
    1/4 cup fresh sage leaves coarsely chopped, salt to taste, 1/8 tsp ground black pepper or white pepper

Notes

Pour over meat, a dipping sauce, over noodles, garlic, or mashed potatoes.
