Maple Glazed Carrots

Preset oven 400 degrees
Ingredients:
2 pounds carrots, scrub and scrape the outer layer. Cut into 2-inch pieces
4 tablespoons unsalted butter
9 Tablespoons sugar free maple syrup. (hold aside 3 tbsp to drizzle on top)
1 tbsp fresh thyme
¼ teaspoon rosemary
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Cinnamon
½ teaspoon nutmeg
1/2 teaspoon smoked paprika
¼ teaspoon red pepper flakes
Preparation
- Line baking pan with foil and add butter place in oven until melted
- Combine in small snack cup all the dry ingredients. Rosemary, thyme, nutmeg, paprika, red pepper flakes, salt and pepper
- Put the melted butter in the pan
- Add the 6 tablespoons sugar free maple syrup to pan along with the spices.
- Stir to combine
- Add the carrots to the pan and stir them into the buttery spiced mixture
- Bake in the oven uncovered for approx. 40 – 45 minutes
- At the 20-minute mark stir again
- Once done drizzle remaining maple syrup over the carrots
This recipe is excellent at Thanksgiving just double the recipe if your having a lot of guests.
